Leah's Favorites: Homemade Hummus

Just a few weeks ago, Leah really got the hang of dipping her food. Now, she absolutely loves anything she can dip. Right now her favorite snack is a small bowl of applesauce with some pretzel sticks she can dip in the sauce. Another favorite is hummus. We eat it a lot for lunch, normally with steamed broccoli and carrots. It is a great way to get kids to eat their veggies if they have a yummy and healthy dip to go with it. I make a batch that will last in the refrigerator for a week. It is really easy to make and is much cheaper than buying it pre-made in the grocery store. You can find tahini in the international aisle. Even though the bottle of tahini is a little pricey, you only use a little bit at a time and will last for awhile in the refrigerator.

Here is Leah's lunch today - her favorite part was the veggies and hummus. She also loves plain pasta and we just found out last night that she likes steak! Forget the chicken, she just wants the beef....is she really my child?!? She must get that from her daddy =)

Homemade Hummus

1 small garlic clove
1 can chickpeas
1/2 tsp salt
1/4 cup tahini (scant)
1/4 cup lemon juice (or just the juice from one whole lemon)
 6-8 Tbsp. water

Combine all ingredients in a food processor and blend until smooth. Add more water or olive oil if needed to get the texture and consistency you want.
