Granola Energy Bites

Happy Monday! I am enjoying my last day of Thanksgiving vacation before going back to school tomorrow. Speaking of Monday's, I only have 2 more Mondays left (max!) before I'm done with school! Also, on Wednesday, I will be 37 weeks, which is considered full term! We are getting very excited for this little girl's arrival =)
Last weekend I made these granola bites again. I love all of the ingredients in these and they are relatively healthy. I like taking them to school with me and eating a few mid-morning to hold me over until lunch. They are good for breakfast, a snack or dessert. Enjoy!


Granola Energy Bites

1 cup oatmeal
1 cup coconut flakes
1/2 cup peanut butter
1/2 cup ground flaxseed
1/2 cup chocolate chips (optional)
1/3 cup honey
1 tsp. vanilla extract
 
Stir all ingredients together in a medium bowl until thoroughly mixed. Let chill in the refrigerator for half an hour. Once chilled, roll into balls of whatever size you would like. Store in an airtight container and keep refrigerated for up to 1 week.

  2. i LOVE these energy bites. they've been a staple in my fridge for like 2 months now and i think that will continue for a long time! i like to eat them for a quick mini breakfast while i tend to davin when i don't have a chance to eat a real breakfast first. :) i put in half the coconut and raisins instead of the chocolate though. my s-i-l likes to eat them frozen too!
