Caesar Chicken Pasta Salad


Happy Memorial Day!
Tyler and I are enjoying our day off by catching up with things around the house, and then later we are heading over to my aunt and uncle's house for a family picnic! Days like today make me very excited for summer! Only 8 more days of school to go!
This pasta salad is a great summer meal that you can eat at room temperature or make ahead of time, refrigerate and eat cold. I also make cheesy basil bread to go with this meal. The recipe is from my mom and it is one of our summertime favorites.

Caesar Chicken Pasta Salad
3 cups chicken
3 cups hot cooked penne (about 6 oz.)
2 cups thinly sliced romaine lettuce
1 1/2 cups halved cherry tomatoes
1/2 cup thinly sliced fresh basil
1/2 cup chopped green onions
1/3 cup fat-free Caesar dressing
1/4 cup chopped fresh parsley
1 (4 oz.) package crumbled feta cheese
1 garlic clove, minced

Combine all ingredients in a large bowl. Toss well to coat.
Makes 4 servings.
