Chicken Corn Chowder

While my parents are in sunny St. Kitts right now (jealous!!), I am here at home where it is freezing outside! Good thing I made this soup the other night. I got the recipe awhile ago from my mom and it is good with lots of cheese and bacon piled on top. Yum!

Chicken Corn Chowder

2 slices bacon
2 cups chicken
1 cup chopped onion
1 cup diced red pepper
2 garlic cloves
4 1/2 cups chicken broth
1 3/4 cup diced, peeled red potato
2 1/2 cups corn - drained
1/2 cup flour
2 cups milk
3/4 cup shredded cheddar cheese
1/4 tsp. salt
1/4 tsp. pepper

1. Cook bacon until crisp in soup pan. Remove and add chicken, onion, bell pepper and garlic to the drippings. Saute 5 minutes. Add broth and potatoes and bring to a boil. Cover and reduce - simmer 10 minutes... until potatoes are almost tender. Add corn.
2. Mix flour and milk in separate bowl. Add to soup. Bring to a boil over medium-high heat. Reduce and simmer 10 minutes until thick. Add salt and pepper. Top with cheese and bacon.
